Grilled Shrimp and Pineapple Fajitas
Ingredients:
1 pound large shrimp peeled deveined tails off
2 tsp Fajita seasoning
2 TB Oil
2 tsp lime juice
Pinch of salt and black pepper
In bowl, toss the shrimp with the other ingredients, set aside refrigerated. Cook the shrimp
On the grill until browned on both sides
In a separate bowl mix together:
2 bell peppers, sliced thin
1 large jalapeño, sliced thin
2 tsp fajita seasoning
2 tsp oil
Place in grill basket a cook until charred. Char 3 thickly sliced pineapple rings on the grill.
Plate the shrimp with the pepper mixture. Serve with avocado, cilantro, lime and tortillas.
