Bacon Wrapped Brussels Sprouts with Creamy Lemon Dip
Ingredients:
- 18 medium Brussels sprouts, trim ends removed and halved
- Salt and pepper
- 18 strips of bacon, cut in half cross wise
- ¼ C maple syrup
- ½ c mayonnaise
- Zest of lemon plus 2 tsp lemon juice
- Crushed red pepper flakes
Instructions:
Preheat oven to 400 F
Lay out the bacon and brush liberally with the maple syrup. Wrap each half of Brussels sprout with each half of bacon. Place each Brussels sprout seam side down on a baking sheet. Brush each with a bit more maple syrup and pepper. Roast until bacon is crisp, about 30 minutes.
Dipping Sauce: mix mayonnaise, lemon zest, lemon juice, ½ C maple syrup. Season with salt, pepper and red pepper flake.
