Cooking with Chef Hermann: Texas Grilled Cheese with Manchego Cheese, Corn and Chilis

Texas Grilled Cheese with Manchego cheese, corn and chilis

4 pieced Texas Toast or thickly cut bread

3 oz white cheddar

3 oz Manchego

2 tsp chopped shallot

½ tsp garlic chopped

1 poblano pepper finely diced

½ red bell pepper finely diced

¼ C fresh or frozen corn off the cob

6 TB butter soft

4 TB mayonnaise mixed with 1 TB chili sauce (sweet or hot your choice)

Mix together the shallots, garlic and peppers. Butter one side of each toast and lay two in the pan.  Spread some of the mayo mix on each slice.  Place slice of each cheese on each bread, sprinkle with the pepper mixture and corn.  Place other slices of toast on top with buttered side up.  Toast 5-6 minutes on each side until golden brown.
