Fish Tostada with Mandarin Orange Salsa

5 inch tortilla

4 tb oil divided

2 Mandarin oranges

1/3 small red onion sliced

¼ cup cilantro chopped

1 small jalapeno, sliced

¼ tsp salt

1 lb of cod

1 tb chili lime rub

1 sliced avocado

1 cup romaine shredded


Sprinkle fish with chili lime seasoning and salt.  Heat 2 tb of oil in heavy skillet and cook fish until tender and cooked through

Wipe cookie sheet with 1 tb oil.  Bake the tortillas until crispy.  Place avocado and lettuce on each tostada then top with cooked fish.  Stir together the orange segments, onion, jalapeno, cilantro, 1 tb of oil and place on top of fish.
