Cajun Shrimp Cakes
Ingredients:
- 1 ¼ lb. Shrimp peeled, deveined, tail removed, finely chopped
- 3 green onions, minced
- 1 stalk celery minced
- 1 Large egg
- 3 TB flaxseed ground
- 2 TB arrowroot
- 2 TB coconut flour
- 1 TB Cajun seasoning
- 3/4tsp salt
- ¼ tsp dry mustard
- Oil for frying
Directions:
Lemon Mayo: Mix together: ¼ cup mayonnaise, 1 tsp lemon zest, 1/8 tsp honey, pinch salt
In large bowl combine ingredients. Using a ¼ C measuring cup, portion the mixture then form into patties.
In large skillet on medium high, heat oil. Add cakes 2-3 minutes each side. Served with the lemon mayo.
