Blueberry Beet Salad with Matcha Dressing

Ingredients:

  • 1 pkg super greens mix
  • 2 cups quinoa, cooked
  • 1 pint blueberries
  • 1 scallion bunch, thin sliced
  • ½ C basil leaves, torn
  • ½ C pistachios shelled
  • 2 TB Hemp seeds
  • 8 oz beets, cooked and sliced

Matcha Dressing: Whisk together and pour over salad

  • 2/3 C Greek Yogurt
  • ¼ C lemon juice
  • ¼ C Olive Oil
  • 1 TB Matcha powder
  • 1 tsp garlic, chopped
  • 2 tsp honey
  • Salt and pepper
