Peach and Tomato Salad with Fresh Mozzarella

Ingredients:

  • 2 TB Olive Oil
  • 2 tsp Hot Sauce
  • 2 tsp Rice Vinegar
  • 2 tsp Honey Salt
  • 3-4 Peaches cut into thin wedges
  • 2 Tomatoes cut into slices
  • 8 oz. Mozzarella, fresh and sliced
  • Tarragon sprigs
  • Salt

Directions:

Whisk to together oil, hot sauce, vinegar and honey in bowl.  Season with salt.  Toss the peaches and tomatoes in the dressing, remove and plate with slices of mozzarella.  Drizzle remaining sauce over the fruit and cheese.  Top with tarragon and sea salt.
