Peppery Greens Salad with Chicken, Avocado and Pepitas

Ingredients:

  • ¼ tsp paprika
  • 3 TB Sherry Vinegar
  • 1 TB Honey
  • 2 tsp Fresh Lime juice
  • ½ tsp black pepper
  • 4 cups arugula
  • 3 cups frisée
  • 2 cups cooked chicken, torn
  • 1 avocado, sliced
  • ¼ C roasted pepitas
  • ¼ C croutons
  • Lime wedges for serving

Directions:

Mix together greens and plate, top with avocado and chicken.

In bowl, whisk together honey, lime juice, vinegar, and paprika. Adjust seasoning with salt and pepper.  Pour over salad.  Top with croutons and pepitas.
