Burger with Eggs and Salsa Verde


  • 1 pound tomatillos
  • 1 onion, quartered
  • 3 jalapenos, sliced and de-seeded
  • 1 TB olive oil
  • 1 c Cilantro
  • 2 tsp pepper

Salsa:  Grill or roast the tomatillos and onions.  Chill.  Add other ingredients and pulse in food processor

Ground beef shaped into patties

  • Salt and pepper
  • Buns or bread
  • 2 large eggs, sunny side up.

Cook burgers to your liking.  Add salsa, then eggs and top of bun.
