Grilled Lamb Patties and Feta Pita Sandwiches

Lamb Patties:

  • 8 oz ground lamb
  • 3 oz feta cheese
  • 1/4C finely chopped red onion
  • 1 tsp lemon zest
  • 1 TB lemon juice
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 TB Olive oil

Directions:

Combine all ingredients and form into 4 patties.  Spray grill or grille pan. Cook over medium high heat until brown.

Pita Fillings:

Shredded romaine

1 Tomato, sliced thin

Dressing:

3 TB small diced cucumber

1/3 C plain yogurt

Mix dressing and toppings into pitas.
