Beer Braised Carrots with Coriander and Feta

Ingredients:

  • 2 tsp. Butter
  • 2 tsp. coriander seeds
  • 2 lb. carrots, peeled and halved lengthwise
  • ¼ C brown sugar
  • 2 tsp. salt
  • 12 oz. beer
  • 2 TB red wine vinegar
  • 2 oz. feta
  • Cilantro

Directions:

Heat oil.  Add butter.  Add coriander seeds and cook until fragrant.  Add carrots, stir in sugar and salt and toss to coat.

Add beer to skillet and bring to gentle boil over medium heat until carrots are tender.  Stir in vinegar and remove from heat.  Plate and topped with cilantro and crumbled feta.
