Spicy Thai Shrimp Cakes
Ingredients:
- 1 lb peeled and deveined shrimp, chopped
- 1 1/3 C Panko bread crumbs
- 2/3 C diced green bell pepper
- ½ C fine dice onion
- ¼ C chopped fresh cilantro
- 4 tsp lime juice
- 2 tsp fish sauce
- 2 tsp Thai sweet chili sauce
- 2 eggs beaten
- 1 tsp garlic, chopped
- 2 TB Olive oil, divided
Directions:
Combine shrimp, 2/3C Panko crumbs, bell pepper, onion, cilantro, garlic, chili sauce, eggs, lime juice and fish sauce in a bowl. Mix well together, then form 8 patties. Dredge patties in the remaining Panko.
Heat 1 TB of oil over medium high heat. Cook 4 patties at a time, flip and cook until golden brown. Serve over mixed greens or rice.
