Cooking With Chef Hermann: Roast Prime Rib

Roast Prime Rib


  • 6 pound rib-in roast
  • Salt and Pepper
  • Worcestershire sauce
  • 1 C Red Wine
  • 1 TB Cornstarch


Heat oven to 425F.

Rub the prime rib with salt, pepper and Worcestershire sauce.  Cook Roast in hot oven for 30 to 40 minutes.  Turn oven down to 300F.  Add 1 C of water to roast pan let roast cook 2 hours until internal temperature is medium 150 to 160.  Turn off oven and roast rest for ½ hour before carving.

Mix together 1 cup red wine and cornstarch until smooth with no lumps.  Bring pan drippings to a boil, then whisk in the cornstarch mixture. Season with salt and pepper to taste.
