Cucumber and Melon Salad


  • ½ C Pistachios, shelled and toasted
  • ½ large jalapeno, de-seeded and thinly sliced
  • 2 TB White Wine Vinegar
  • 2 tsp Honey
  • 3 TB Olive Oil
  • 1 English Cucumber, thinly sliced into strips
  • ¼ Honey dew Melon, thinly sliced into long strips
  • 5 oz. Ricotta or Feta Cheese, cubed
  • ½ C Basil Leaves, torn or spiral cut


Arrange cucumber and melon on plate sprinkle feta pieces. Whisk together vinegar, honey and jalapeno and olive oil.  Drizzle over the cucumber and melon.  Top with basil leaves and pistachios.
