Spaghetti with Tomatoes and Anchovy Butter

Ingredients:

  • 12 oz. Spaghetti, cooked
  • Salt
  • 4 TB Butter
  • 2 TB Olive Oil
  • 2 Oil packed Anchovy fillets, chopped
  •  Cloves garlic, chopped
  • 2 lb tomatoes, quartered
  • Black Pepper
  • 1 Tb each parsley and chives chopped
  • Reserve pasta water or stock

Directions:

In sauce pan, add butter to the oil and heat.  Add the garlic and anchovies cook until garlic is soft, 3-4 minutes.  Add the tomatoes, season with salt and pepper, stir occasionally.  If too thick, add some reserved pasta water or stock.
