Spaghetti with Tomatoes and Anchovy Butter
Ingredients:
- 12 oz. Spaghetti, cooked
- Salt
- 4 TB Butter
- 2 TB Olive Oil
- 2 Oil packed Anchovy fillets, chopped
- Cloves garlic, chopped
- 2 lb tomatoes, quartered
- Black Pepper
- 1 Tb each parsley and chives chopped
- Reserve pasta water or stock
Directions:
In sauce pan, add butter to the oil and heat. Add the garlic and anchovies cook until garlic is soft, 3-4 minutes. Add the tomatoes, season with salt and pepper, stir occasionally. If too thick, add some reserved pasta water or stock.
