Spiced Wine Poached Pears
Ingredients:
- 1 lemon, cut into quarters
- 6 ripe firm pears, Bosc or Anjou
- 2 C Red Wine
- ½ C water
- 3 TB Sugar
- 3 TB Honey
- 2 cloves, whole
- 1 cinnamon stick
- 1 whole star anise
- Whipped Cream
Method:
Peel the pears, leaving a top knot of peel and the stem. Rub the lemon on the pears. Working from the bottom, gently core the pears.
In a pot that fits the pears snugly: cut lemons into slices, add to the pot with all the ingredients except the pears. Bring to a boil. Lower the heat, add the pears top stem up. Cover and simmer for 15 minutes or until slightly firm but easily pierced with a knife. Transfer pears to serving bowls. Boil the syrup for another 5 minutes and strain. Pour over the pears and serve with whipped cream.
