Chorizo Poached Shrimp Fettuccine


  • 1 C Olive oil
  • 4 oz Chorizo Sausage
  • 1 pound shrimp, de-veined and shelled
  • 1 garlic cloves, chopped
  • Salt
  • 2 tsp white wine
  • 12 oz Fettuccine, cooked, al dente
  • 1 pint cherry tomatoes
  • 1 C Basil, torn plus more for garnish


In sauce pan, cook chorizo until browned about 10 minutes.  Using a slotted spoon remove chorizo.  Add the shrimp, garlic and pinch of salt.  Add the tomatoes and wine, cook until tender then add the fettuccine.  Cook until the pasta is warmed through and a light sauce has formed.  Add the basil, add salt if desired.  Serve and enjoy!
