Spaghetti with Lemon and Shrimp
1 lb Spaghetti cooked
¼ C Capers
2/3 C Olive oil 3 TB olive oil for sauté
1 C parmesan cheese
1 TB lemon zest
½ C fresh lemon juices
1 lb fresh shrimp
Salt n Pepper
3 TB fresh Basil, chopped plus garnish
Whisk together 2/ C olive oil, lemon zest, lemon juice and cheese, set aside. In a skillet, add oil then capers and sauté until crisp. Add the shrimp and cook until opaque, about 4 minutes. Reduce heat and add the spaghetti, tossing it with the capers and shrimp. Add the lemon sauce, toss. Add Basil, salt and pepper to taste. Garnish with Basil.
