Ingredients:
1 large shallot
3 cloves garlic
½ C light brown sugar
¼ C fish sauce
2 TB soy sauce
2 TB Oil
2 tsp. ground black pepper
4 ½” Pork Chops
3 Red Plums cut in ½” wedges
2 scallions thin sliced
1 chili thin sliced
2 C torn mixed herb leaves (basil, cilantro, parsley, mint)
½ C Bean Sprouts
2 TB rice vinegar
Lime wedges
Blend shallot, garlic, brown sugar, fish sauce, oil and pepper in bowl. Add pork chops, marinate chilled 1 to 12 hours. Prepare grill for medium high heat. Grill until charred, about 3 minutes per side. Meanwhile, toss the plums, scallions, chili, bean sprouts and vinegar in large bowl. Serve pork chops with herb mixture and lime wedges
