CADILLAC — The new Indian Spice restaurant in Cadillac has seen an influx of visitors in its first week of operation, forcing the owners to pause service Jan. 20 to resupply due to high demand.
The new restaurant, at 621 S. Mitchell St. initially opened in early January at the the old Cast Iron Kitchen location with much local anticipation and has served so many people in its first week open that owner Parminder Singh announced in a Jan. 19 Facebook post that the restaurant would need to shut down for a day to provide time for staffers to restock.
The owners are Sam Chugh and his nephew Parminder Singh. Chugh also owns NJ’s Grocery in Lake Leelanau where he serves Indian cuisine.

“Due to really high demands and lack of a few key ingredients, Indian Spice restaurant will not be open tonight for dinner,” Singh wrote. “I am sorry for such a short notice. We are working towards a more efficient and faster service model to keep up with the high demand such as adding ordering devices at the tables to order and pay for their food. This will be added in the coming month or so. We are also working towards a website with precise hours and menu as well as a Facebook (and) Instagram account to post about any new food items being added to the menu.”
The restaurant currently offers a full menu to choose from as well as a buffet that is open from 11:30 a.m. to 2:30 p.m. The restaurant also accepts takeout orders.
Singh said that in the first week, the staff worked hard to keep up with the demand between the buffet, traditional menu items and takeout orders flowing in.
In a Jan. 16 Facebook post, he expressed appreciation of visitors’ patience as the staff worked to adjust to needed service and demand adjustments.
“This past week has been nothing short of incredible for us at Indian Spice,” Singh wrote. “We are truly overwhelmed and deeply grateful for the amazing support and warm welcome we have received since opening our doors. Your excitement for authentic Indian cuisine has been beyond our expectations, and we are so thankful for each one of you who has come to try our food and support our family-owned restaurant.
“At the same time, we want to sincerely apologize to anyone who experienced delays or didn’t receive their food due to the high demand. We are humbled by the overwhelming response and admit that we were not fully prepared for the level of support you’ve shown us. Please know that we are actively working to improve our organization and service so we can serve you better in the future.”
Singh said any feedback on improving the restaurant ad the business continues to establish itself will be greatly appreciated.
The restaurant’s hours are currently as follows:
- Monday-Sunday (excluding Jan. 20) ― 11:30 a.m. to 2:30 p.m. (buffet) and 4:30-8:30 p.m. (dinner)
